I usually take leftover cocktail shrimp and heat them with some garlic, onions, chile power and oil. These then go in a quesidilla with whatever accoutrements I have in the fridge.

Yesterday, I was putting one together and added sour cream and salsa on top (no guacamoles in the fridge). I started to eat it and realized that the jarred salsa was TERRIBLE. If I had wanted tomatoes on it, I would have just added them. Trader Joe's makes a couple of good jarred salsas that I like, but I would like to try to make one. So, who has a good salsa recipe? I do not fear spicy things, but would like it to have flavor. I would also like to be able to make a large batch and freeze some to eat later. I also bought a food processor to make baby food, so I figure it would be useful for this project.

Roasted Jalapeno tomato salsa w/ cilantro

1 1/2 pd ripe whole tomatoes(about 10md sized ones)
2 to 3 fresh jalepeno chilies
1/2 small white or red onion(sliced)
1/4 cup water
1/3 cup chopped cilantro
1 tbs salt
1 1/2 tbs cider vinegar.

Heat boiler lay whole tomatoes and jalapenos out on broiler pan or baking sheet.

Set pan 4"below broiler and set to broil for about 5-6 minutes until dark roasted. the tomatoe skins should split and curl.
with tongs flip the tomatoes over and the chiles and roast the otherside.
(the goal is not to char the tomatoes and chiles, but to cook them through to collect the roasty flavors. set aside to cool.

turn oven down to 425, seperate onions into rings, on same pan combine onions w/garlic. roast in oven stiring ocassionally every few minutes until onions are browned and the garlic is soft and browned, about 12-15 minutes total cooking. let cool to room temps.

in a processor, add your whole chiles,onions,and garlic and chop until moderately fine chopped.

place contents into a bowl.

dont clean the processor, now add your whole tomatoes and coarsely puree them.

All the juices will be added into that bowl with your chiles and onions and garlic.

Stir in enough water for a sponable consistancy( i normally leave it on the less soupy side)

lastly stir in cilantro.

Taste and season with salt and vinegar if needed.

there you have it. something i like to cook on occasions, simple and easily ready in a 30 minutes.
