Texas Jalapeno poppers

Not sure where this one started, but I got it as an "oooo you got to try this.." recipe from a friend.

what you need:
about 10 jalapenos. a few more if they are small, couple less if they are big.

Cream cheese. i like to use the vegetable garden mix. Try out some stuff to mix in with it. onion dip mix, chili powder, habanero bbq sauce. Have fun.

Bacon. i like the thicker apple wood smoked, but anything will do. I have even used turkey bacon.


Now do:
Split the japs lengthwise and scrape them out. I dont scrape them too much. my wife chooses to scrape completely and wash them out. That takes away the risk factor in my opinion.

Spoon some of the cream cheese mix into each half.

wrap with a half slice of bacon

shove them into an oven at about 390-410 and cook until the bacon is done. Depending on a few different factors, like bacon thickness, bacon fat, size of japs etc, it takes about 30-50 minutes.
